A DAY IN THE LIFE EATING A LOW FODMAP DIET

Hi guys and happy Tuesday!! How are you? I’ve been home from the hospital for a week now and am truly starting to feel better. PRAISE! I also started back to work yesterday after two weeks off which was nice to bring some structure and routine back into my weekdays!

I haven’t dived too deep into it on the blog, but in case you missed it from my Instagram stories (follow me to see all the real time updates at itscourfit!), I was diagnosed with an autoimmune disease on March 5th after a second ER trip. Life has been an emotional rollercoaster these past two weeks since my diagnosis, but there is also a sense of peace and clarity in finally knowing what is going on in my body.

LOW FODMAP DIET

Right away, I met with a Dietician who specializes in IBD and Ulcerative Colitis who recommended I explore the low FODMAP diet for the next two weeks before we meet again. This is something that was super new and intimidating to me, but it is presumably used to help ease symptoms and in turn figure out which foods trigger problems. It sounds good in theory, so I’m hoping it works for me!

My dietician helped lay out realistic meal ideas and recipes that make it super easy to follow where it doesn’t feel as restrictive. This is not a diet that is supposed to be used long-term, but rather temporarily to help figure out which FODMAPs are triggers so I can avoid those moving forward. WHAT I ATE IN A DAY ON THE LOW FODMAP DIET

I’m officially 5 days into exploring all things low FODMAP and I wanted to share a what I eat in a day to hopefully inspire or help others who may be struggling with IBS or IBD symptoms. Of course, I am not a registered dietician or doctor so please take this as inspiration and meal ideas only. Even if you don’t struggle with gut issues, there are some good recipe ideas from today’s meals! Just wanted to share what I’m currently going through and hope it helps someone in return 🤍

8 AM: PALEO PANCAKES. This is the second time I have made these delicious, fluffy paleo pancakes in a week. They are so good and my three year old loves them too. The only thing here is the applesauce added to the mix isn’t the best for low FODMAP, but really it’s a tiny amount per serving. Cooking with ghee has become my new favorite thing and I add lots of cinnamon to the mix and it makes them taste even better!

10 AM: BERRY PROTEIN SMOOTHIE – I’ve been drinking a smoothie every single day since I’ve been home from the hospital and don’t see myself stopping anytime soon. Since I’m also trying to gain weight back that I lost from this disease, smoothies are a super easy way to pack in calories and nutrients. My usual low fodmap smoothie looks like:

  • 1 frozen banana
  • 3 frozen strawberries
  • handful of frozen blueberries
  • handful of baby spinach
  • 1 scoop Truvani vanilla protein powder
  • 3tbsp Chobani greek yogurt (Greek yogurt is considered low fodmap in small amounts)
  • 2 tsp chia seeds
  • Califia Farms Organic almond milk

12 PM: SANDWICH ON GF BREAD + LOW FODMAP FRUIT – I’ve also been loving this quick and easy lunch that comes together effortlessly while working from home. I add ham, cheddar cheese, lettuce, & Mayo on toasted Canyon Bakehouse Hawaiian gluten free bread! Paired with a clementine and gluten free Snyder’s pretzels.

3 PM: CEREAL + ALMOND MILK – my dietician recommended this cereal as a good snack and a way to add more calories to my day and it’s so good!!! Reminds me of all the yummy cereals from my childhood but a low FODMAP, gluten free version!

5 PM: SIETE TORTILLA CHIPS + LOW FODMAP SALSA – this low FODMAP salsa recipe is shockingly delicious! Even my husband who loves all the flavor thought this was 10/10. I added avocado to make it more filling and it was the perfect snack paired with the sea salt Siete tortilla chips.

6 PM: LOW FODMAP TACOS – you guys, I’m still thinking about how good these tacos were! I used the gluten free Siete shells (these are amazing!) and filled them with ground beef (+ low fodmap taco seasoning), lettuce, cheddar cheese, and my low FODMAP salsa! Paired with a side of cilantro lime rice.

8 PM: ALMOND FLOUR COOKIES – these cookies are seriously SO GOOD! I’ve been on a bit of a baking kick and my dietician told me sugar is actually super easy for the body to digest so naturally, I’ve made two batches of these almond flour cookies. Another tasty sweet my whole family enjoys!

And 2 cookies later that concludes what I ate today on the low FODMAP diet! Let me know if any of you guys have experience on this diet and what recipes or snacks you enjoyed eating in the comments below! I feel like I’m stuck eating the same thing every day LOL.
